During transitions between our House Coffee’s we like to run a ‘Guest Coffee’ for a couple of weeks to a month. This coffee is selected as an opportunity to showcase coffee’s from other countries around the world with a slightly more complex flavour profile than our House selections. Usually providing a slightly more refined acidity and sometimes a delicate fruity/floral aspect to the cup. This coffee from Baudilio Lemus at Los Tablones, Guatemala is no different.
Yallah Coffee - We’re proud to offer this small lot from Baudilio Lemus, sourced during our sourcing trip to Guatemala earlier this year. We wanted to find something exclusive for FED that showcased the best qualities of Guatemalan coffee and here it is. Expect a silky smooth, rich & complex espresso that you can drink all day long.
Baudilio’s father planted his first coffee about 62 years ago, starting with less than one hectare of coffee, and began learning all he could about the crop. They’ve grown step by step, little by little. Now, they have a wet mill on the farm and have focussed their efforts on improving quality through better ‘processing’. Controlling the process from start to finish.
As is typical for this region, they have over 90% shade grown coffee which protects the soil & slows maturation of cherries. They also work actively to protect the small springs & water sources on the farm. We’re proud to say Baudilio received a premium of 46 cents per pound over commodity price for this lot.
